Chocolate Peanut Butter Balls

Are we at that point yet where we can give up on our new year’s resolutions? If not, then this recipe might just get you off the “lose 10 pounds” bandwagon. Well for my mom it is. One of the fastest treats you can make is my chocolate peanut butter balls. They do not require any pots or the stove, only a microwave and a microwave safe bowl. Like always they can be mixed up anyway you like. They also make a lot, I made about 42. They are so tasty you won’t need to buy those reese pieces chocolate bars as these taste similar (just in ball shape).

Ingredients

2 cups semi-sweet chocolate (or any chocolate you enjoy)

1 1/2 cups rice crisp cereal

1 cup peanut butter

1 cup confectioner’s sugar

1/4 cup of butter

1 tsp vanilla extract

Toffee bits (optional)

Directions

Melt the butter in the microwave for about 45 seconds (I like to melt it first for 30 seconds and check how melted it is and then go by 10 second intervals after, until all melted). Add the peanut butter (I use crunchy peanut butter to give the final product even more crunch) to the butter and stir until the peanut butter is melted. Add the confectioner sugar, the vanilla extract and finally the rice crisp cereal. Mix until combined. Using a small spoon, scoop a spoon worth of the mixture and roll into a ball (I wet my hands slightly to prevent the mixture from sticking to my hands). Place the peanut mixture ball onto a parchment lined cookie sheet. Once all the mixture is rolled into balls and placed on a parchment lined cookie sheet, place the sheet in the fridge for a couple of hours (or if you’re impatient like me you watch an episode of your favourite television show and then proceed to the next step). Once the balls have had time to harden, melt the chocolate for about 45 seconds (again, I melt it for 30 seconds give it a toss and then melt for 10 second intervals, until all melted). Add the peanut mixture ball into the chocolate and toss until covered with chocolate. Place it back on the the parchment lined cookie sheet and repeat until all the peanut balls are coated. If you desire, sprinkle with toffee bits like I did. Place back into the fridge and allow it to harden (again, watch one episode of your favourite television show). Place on a dish and enjoy!
