Valentine’s day is just around the corner and what better way to spend the occasion with your single friends binge watching Netflix and eating your feelings. Who needs a significant other when you have friends right? These cupcakes are the perfect way to end your pizza party on Valentine’s day. They are decadent and so chocolatey! Also the frosting is to die for, it is a cookie dough frosting. The frosting takes you to a whole new level of cupcake world. You don’t even need to cry over anyone because these cupcakes are that good.
This recipe makes 12 cupcakes.
Ingredients
For the cupcakes
2 eggs
3/4 cup flour
1/2 cup of milk
1/2 cup of brown sugar
1/2 cup of white sugar
1/3 cup of cocoa powder
1/3 cup vegetable oil
2 teaspoons vanilla extract
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1/4 teaspoon of salt
For the frosting
1 cup of confectioner sugar
1 cup of cookie butter
1/2 cup of softened butter
3 tablespoons of milk
Directions
Preheat your oven to 350 degrees F and line a muffin tin with cupcake holders. In a mixing bowl add all the dry ingredients (sugar, flour, salt, baking power, baking soda, and cocoa powder) and give a gentle mix to combine. Next add the vegetable oil, eggs, and milk followed by vanilla extract to the dry ingredients. Mix until slight combined and has the consistency of pancake/muffin batter. Pour the batter evenly into the cupcake holders. Bake for 19 mins or until when pricked with a toothpick comes out clean. As the cupcakes cool, place softened butter and sugar into a mixing bowl and whisk until the mixture is fluffy. Add the cookie butter and combine again until fluffy. Add one tablespoon of milk at a time until consistency of frosting is reached. Frost the cupcakes and enjoy!
