Since fall has arrived and ’tis the season for pumpkin flavoured everything, I thought this would be the perfect time to share my pumpkin pie cookies. These cookies provide the perfect amount of moisture, and are chewy (as those cookies are the best kind around). They are also a wonderful alternative to your traditional pumpkin pie (if you are like me an hate pie making). The frosting on top of these cookies are heaven, but totally optional. I brought these cookies in for work and by 12 pm they were all gone. So why don’t you give this recipe a try? I can guarantee you that you will be making these cookies over pumpkin pie.
This recipe makes 2 dozen cookies.
Ingredients
For the cookies
2 1/4 cup flour
1 cup of brown sugar
1 cup of pure pumpkin (DO NOT USE PUMPKIN PIE FILLING!)
1 egg
1/2 cup of softened butter
1/2 cup of white sugar
1 tbsp pumpkin spice
1 1/2 tsp vanilla
1 tsp baking powder
For the frosting
2 cups of powdered sugar
1 cup of brown sugar
1/2 cup of butter
1/4 cup of heavy cream
Directions
Preheat oven to 350 degrees. In a bowl combine the butter with both sugars. Once combined, add the remaining wet ingredients (pumpkin, vanilla, and egg) and mix throughly. When all wet ingredients are combined throughly, add the dry ingredients (flour, baking soda, pumpkin spice). Divide the cookie mixture into desired size onto a pan and bake for 12 mins. Remove from oven after 12 mins and allow to cool to room temperature. When the cookies are cooling, begin the frosting.
To make the frosting, using a pot melt the butter on medium heat on the stove. Once the butter has melted add the brown sugar and let this simmer for 2-3 mins. Take the pot off the heat and add the heavy cream (it will boil away but do not panic). Once the heavy cream is incorporated, add the powdered sugar and whisk into the mixture. Working quickly dip the top of the cookie into the frosting mixture and place on a plate to cool.
Tip: if your frosting begins to harden just warm the pot up until it is loose again.
Allow the frosting to fully set and enjoy!
