Bakery Style Chocolate Chip Muffins

Breakfast! It is something I do not enjoy. One, because most of the time I do not have the time to make something delicious (ie; eggs and toast). And two, I cant sit through 15 mins (sometimes longer) trying to eat something when I am not hungry. So I came up with this idea that I would pre-make my breakfast so I can have at least something small every morning, because I know (you don’t need to tell me) breakfast is the most important meal of the day. But let me tell you, I am still smart (well, I like to think I am) whether I have breakfast or not (as they tell me it enhances brain function) and I am still thin (and they tell me if you don’t eat breakfast you’ll get fat).

These muffins, will have you going crazy. Not only are the tops crunchy (my favourite) and the bottoms nice and soft, you wont be needing to spending over $1.00 at your local bakery, or Timmies buying muffins. It probably costs you $1.00 to make this recipe and its tastes way better, because you know whats in them (and because they are bomb.com)!

But if you’re like me, and struggle with breakfast, this recipe is a great morning snack (heck, you can eat them whenever you want, I’m not judging you), and if for some reason you are crazy and dislike chocolate chip muffins, well your loss. No I’m kidding, you can just substitute it with your favourite fruit like raspberries. This recipe is perfect because it makes enough for the week, and so you can eat one or two a day (like i have been doing) and then store them in an air-tight container for the rest of the week. When you are ready to eat one, pop them in the microwave for 15 seconds to warm them up.

These are best served warmed, and I enjoy adding a little bit of jam to them. Goes great with your morning coffee or tea!

Makes 6 muffins (but can easily be doubled to make 12 muffins)

Ingredients

1 and 1/4 cup of flour

3/4 cup milk chocolate chips (or more if you like, I’m not judging)

1/2 cup sugar

1/2 tbsp baking powder

1/2 tsp baking soda

pinch of salt

1 egg

1/2 cup milk

1/4 cup butter

1/2 tbsp vanilla extract

Directions

Begin by preheating your oven to 425 degrees F. Then melt your butter (if you are using a microwave melt for 30-45 seconds) and combine with sugar. Add your egg, milk and vanilla extract and mix until blended together. Then add you dry ingredients (flour, baking powder, baking soda, and salt) and mix until almost combined. When your batter is nearly combined add the chocolate chips and mix until combined. Using an ice cream scoop (or any measuring spoon), divide the batter evenly into a lined muffin tray. Bake at 425 for 5 mins, and then lower the oven temperature to 375 and bake for an addition 14 mins, or until when poked with a toothpick (or fork) comes out clean. Allow to cool for 10 mins and enjoy!
