Asian Lettuce Wraps

When the weather gets hot and humid all I am looking for is something refreshing and quick to eat for dinner. These lettuce wraps hit the spot. The filling allows you to feel satiated, while the lettuce is light and refreshing.

This works perfect as an appetizer or as a light dinner for a hot summer day! You can also put this filling on a bed of rice (if you didn’t want to do lettuce), that would be delicious too!

2 servings / 15 min prep time / 30 min total time

Ingredients

1 lb ground meat (ie; chicken, turkey)

2-3 mushrooms, grated or finely chopped

½ red pepper, diced

½ onion, diced

1 glove garlic, grated

1 tsp ginger, grated

Salt & Pepper

Package Boston lettuce

Green onion for garnish

Cucumber, diced for garnish

Sauce

2 tbsps soy sauce

2 tbsps hoisin sauce

1 tbsp rice vinegar

½ tsp sesame oil

1 tbsp Sambel olek (optional)

Directions

In a bowl combine sauce ingredients

In a skillet on medium heat add the ground meat and season with salt and pepper. Cook until half way cooked (there should be some bits that are still pink), around 5 minutes.

Add the mushrooms, onion, red pepper, and garlic. Cook until the ground meat is no longer pink and veggies are softened, about 5-8 minutes. 

Add the sauce to the skillet and cook until it slightly thickens and has evenly saturated the mixture, about 2- 3 minutes.

To serve, get two lettuce leaves and add a few spoonfuls of the filling. Garnish with green onion and enjoy!
