Where I live kale is in season, and I’ve even received kale in my produce box a few times already. While kale is great for morning smoothies, I have so many leftovers, leaving me to wonder… what do I do with all this kale? Well the answer is easy…KALE CHIPS.
These “chips” are a much healthier alternative to the bagged stuff and you’ll be munching on these until next thing you know, the bowl is gone. These are highly addictive and you can mix up your toppings to create different flavors. Add some vinegar to make a salt and vinegar flavor or some ranch seasoning to make a ranch kale chip. I highly recommend you try these out, besides what else are you going to do with all that kale?
2 servings / 5 mins prep time / 20 mins total time
Ingredients
2-3 cups kale, chopped up (you’re looking to have a baking sheet worth)
1 tbsp olive oil
½ tsp salt
Directions
Preheat oven to 350 °F.
On a parchment lined baking sheet lay out kale.
Drizzle olive oil and salt over the kale and massage it, so each piece of kale has an even amount of olive oil and salt.
Bake for 15 mins or until crispy (the kale will be wilted down and the edges will be slightly brown).
Enjoy!
