I love peaches! It’s probably my favourite fruit and when it comes to the summer, it’s what I often look forward to picking up at the store or farmer’s market. I often find myself grabbing the 3 litre basket of peaches only to realize that I need to rush to eat them before they go bad. To prevent my worry of the peaches going bad, you will often see me making these muffins. It’s a great way to use up any peaches that might be starting to go bad and makes for a great treat. I recommend going the extra mile to make the streusel topping as this makes the muffins even better.

Ingredients
1 ¼ cup flour
1 ½ tsp baking powder
½ tsp salt
2/3 cup sugar
2 cups peaches, skin removed and chopped
½ cup milk
1 egg
½ cup vegetable oil
Streusel topping
1/3 cup brown sugar
1 tbsp sugar
½ tsp cinnamon
¼ butter, melted
2/3 cup flour
Directions
Preheat oven to 350 °F and line a muffin tray with cupcake/muffin cups.
Add the flour, baking powder, salt, and sugar to a large bowl and whisk until combined.
Add the peaches and combine until evenly distributed.
In a bowl combine milk, egg and vegetable oil and whisk until combined.
Add the wet ingredients into bowl of dry ingredients and mix until just combined.
Evenly portion the batter into the 12 muffins cups.
In a small bowl combine your streusel topping and mix until you have a sand like consistency. Top each muffin with the streusel topping.
Bake for 35 mins (or until a toothpick comes out clean in the centre of the muffin).
Allow to cool completely and enjoy!
