Instant Pot Pulled Pork

Just because the last weekend of summer is over doesn’t mean you have to give up all your favorite summer foods! I have been craving a pulled pork sandwich for the longest time and the grocery store had some pork shoulder on sale so I quickly grabbed it and headed home to make this recipe realizing I haven’t shared it yet. I love making this in the instant pot because it’s so simple, you dump all the ingredients, set the timer and you’re basically done. No hard work needed here!

4 servings / 15 mins prep time/ 1 hour total time

Ingredients

1 can (355 mL) of pop

1 kg (2.2 lbs) pork shoulder, cut into 4 pieces

Sauce

       2 cups bbq sauce, reserve ½ cup for the end

       1/3 cup brown sugar

       4 tbsp vinegar

       2 tsp garlic powder

       1 tsp onion powder

Directions

In a bowl combine all the sauce ingredients until well combined.

To the instant pot add the can of pop.

Place the pork shoulder into the instant pot.

Pour the sauce all over the pork shoulder.

Place the lid on the instant pot and set the steam release valve to sealing.

Set the pressure cooker for 35 mins (Note: I do 15 mins per lb of meat). After 35 mins, allow for a natural release of 10 mins. Turn the valve to venting.

Take the pork out and shred with two forks. Add the remaining bbq sauce and ¼ cup of the liquid from the instant pot.

Top the pulled pork on a bun and serve along side your favourite chips. Enjoy!
