We are half way through summer here in Canada, and I can happily say it has been a hot one! And now I love the heat (always have and always will), but what I do not love is turning on my oven or stove during the hot summer months and having my air conditioning go on over-drive. This is why I love grilling on hot summer days. The BBQ is just so much quicker to heat up and cook food items. Also BBQ food always tastes so much better!
We have been loving these grilled vegetables, we use it as side dishes to most meals (ie grilled chicken or steak) or put them on sandwiches with cheese and cold cuts. However you eat them you’ll be as obsessed with this recipe as I am.

Ingredients
2 zucchinis, sliced
1 red bell pepper, cut into 5 slices
1 bunch of asparagus
Salt & pepper
1-2 tbsp olive oil
Marinade
2 tbsp olive oil
½ lemon, juiced
1 garlic clove, grated
1 tsp sugar
1 tsp Italian seasoning
Directions
Place marinade ingredients into a jar and shake well. Set aside.
In a large bowl added vegetables (larger sliced vegetables work best as they don’t fall through the cracks of the bbq) with a bit of olive oil and salt and pepper. Mix so each piece of vegetable is coated with olive oil salt and pepper.
Heat BBQ to medium heat, once hot enough add the vegetables and cook between 2-4 mins per side (depending on how thick the vegetables are). Vegetables are done cooking when they become soft.
Once vegetables are cooked through, add back to the bowl with marinade and mix through so marinade is evenly coated. Let rest for 10 mins so marinade can flavour the vegetables and enjoy!
