Creamy Potato Salad

We love potatoes around here, but what I don’t love (especially during BBQ season) is having to be in the kitchen using the oven on a hot summer today. So I tend to lean towards prepping my side dishes beforehand. This creamy potato salad recipe has so much flavour and it’s definitely a BBQ worthy side dish. Simple to make and requires only a handful of ingredients and wayyyy better than store bought.

This potato salad can be done a few hours before a BBQ and placed in the fridge for all the flavours to mix together. I prefer to boil the potatoes that are cut up for two reasons. One it helps with the cooking time (cooks a lot faster when there are smaller pieces vs whole potato) and two the hassle (and my patience) of cutting the potatoes when they are cooled can be a bit messy. I also enjoy adding fresh dill to the salad to give it a bit of green and to elevate the taste. You can double the recipe to feed a crowd (if you have bigger BBQ get together), but this recipe was designed for a side dish you might have for a dinner. Ingredients

4 potatoes, peeled and cubed

1 egg, hard-boiled and chopped

1 stalk green onion, diced

Dressing

¼ cup mayonnaise

1 tbsp sweet relish

1 tbsp vinegar

½ tbsp mustard

1 tbsp chopped fresh dill

¼ tsp garlic powder

¼ tsp paprika

Salt & pepper

Directions

Start by putting the peeled and cubed potatoes in a pot of cold salted water and bring to a boil. Allow the potatoes to simmer until fork tender, 15-20 mins.

While the potatoes cook, make the dressing. In a bowl add the dressing ingredients (mayo, relish, vinegar, mustard, dill, garlic powder, paprika). Mix until combined. Set aside in the refrigerator.

Once potatoes are cooked, drain the potatoes under cold water and allow to cool, about 40 mins.

When ready to assemble add cooled potatoes to the bowl with dressing along with the chopped hard-boil egg and green onion. Stir until combined. Place in fridge to allow flavours to mingle.
