Broccoli Cheddar Soup

This hearty broccoli cheddar soup is loaded with incredible flavours, yet it uses everyday ingredients that you have in your house and is ready in under an hour! Filling and delicious! No need to get this at restaurants or stores to satisfy your craving for broccoli cheddar soup!

This soup is probably one of my favourite soups to make! Why? It’s easy to make (ready in under an hour) and it’s the perfect comfort food! It’s filling and filled with vegetables. I ate it for lunch everyday this week.

What makes this soup so good? The abundance of broccoli throughout the soup, the use of milk instead of heavy cream and the most important ingredient cheddar cheese. Broccoli cheddar soup is an onion garlic base, thickened with a roux (butter and flour mixture) which the broccoli and carrots simmer in a milk and stock mixture. At the end you grate cheddar cheese to give it a velvety smooth texture. It’s thick, rich and truly decadent.

Ingredients

¼ cup butter

1 onion, diced

1 large garlic clove, grated

¼ cup flour

2 cups chicken stock (use veggie stock if you want it vegetarian)

2 cups milk

1 carrot, shredded

1 large head of broccoli, cut into bite size pieces

2 cups cheddar cheese, shredded

Salt and pepper

Directions

In a soup pot, add the butter and allow it to melt. Once the butter has melted, add the onion, garlic, salt and pepper and sauté until onions are soft and translucent, about 5 mins.

Add the flour and whisk together until the flour is incorporated and you no longer smell raw flour.

Slowly pour the chicken stock into the pot, whisking as you pour to remove any lumps. Add the milk along with the broccoli and carrot. Allow the soup to come to a gentle simmer on low heat and simmer for 20 mins, or until the broccoli is fork tender.

Using an immersion blender, blitz the soup until you get the desired texture. Add the cheddar cheese, stirring until it is melted. Taste the soup and season with salt and pepper if needed. Enjoy!
