Classic white wine gravy

Remember that whole roasted chicken recipe I posted last week? Well when all done cooking in your instant pot you can use all them juices for a delicious gravy. Do NOT throw it out, that is flavor town right there! This gravy recipe can be done while your chicken rests, and any leftover gravy can be used as a dipping for potato wedges, poutine or even a chicken sandwich (think of a thanksgiving sandwich – this is a great recipe idea so stay tuned for that!).

Ingredients

¼ cup butter

¼ cup flour

1 ¾ cup-2 cups reserved liquid from the instant pot, with the fat skimmed from the top

Directions

On medium heat, add butter to the pan and allow it to melt.

Add the flour and whisk until you get a medium brown colour and it starts to smell nutty, you are looking for the flour to combine with the butter and to cook it out a bit.

Slowly whisk your broth, add about ½ cup liquid and whisk until it thickens.

Continue to whisk and add liquid until you reach your level of perfect thickness.

Add to your mash potatoes and chicken and enjoy!
