Often times when I go to the grocery store I will pick up extra bananas. I tend to use bananas to make smoothies for breakfast, but the bananas that don’t get used by the end of the week transform into these delicious banana bread nut muffins.
They aren’t too sweet but the ripe bananas make it just sweet enough, and its likely that you already have all the ingredients at home. They are perfect for a breakfast treat or a mid-afternoon pick me up and pair great with a coffee!

Ingredients
3 ripe bananas (4 if your bananas are on the smaller side)
¼ cup of butter, melted
½ cup granulated sugar
1 egg
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
¼ tsp salt
1 ½ cups all-purpose flour
½ cup chopped walnuts
½ cup chocolate chips
Directions
Preheat oven to 350 degrees. Line a muffin tin with 12 cupcake liners.
In a large bowl mash the bananas. Once mashed add the melted butter and mix until combined.
Add the sugar, egg, and vanilla and stir until combined.
Next add the baking soda, baking powder, salt and mix. Once incorporated, add the flour and mix until just combined. Add the walnuts and chocolate chips until you no longer see flour marks.
Divide the batter among the muffin tin. Place in the oven and bake for 22 minutes or until a toothpick comes out clean.
